Homemade Hummus
1 1/2 cups dried chickpeas--soaked overnight
1 tsp kosher salt, or to taste
5 garlic cloves
6 oz sesame seed paste
1/2 cup fresh lemon juice, or to taste
2 tsp olive oil
2 tsp minced parsley
Rinse and soak chickpeas in a pan, overnight. Drain and refill the pot with water, making sure to cover the chickpeas. Bring to a boil, then lower heat and simmer for 90 minutes, or until very soft.
After draining, transfer the chickpeas to a food processor. Add garlic, salt, and a cup of water to the processor bowl; pulse until you have a smooth paste .
Transfer to a separate bowl, add sesame seed paste, lemon juice, and stir with a spatula until the hummus is thoroughly mixed. Taste, then adjust to taste by adding more lemon juice, or salt.
Display in a glass bowl, drizzle the two teaspoons of olive oil over the top, then add minced parsley as a garnish.
Serve with crackers and/or fresh cut vegetables. Yields 4 cups.
